Strawberry Lassi

Makes 1.5 litres

  • 400g strawberries, hulled and roughly chopped
  • 750ml ice-cold water
  • 300ml natural yoghurt
  • 25g golden caster sugar
  • Few drops of rose water
  • Coarsely ground black pepper


  1. Place the strawberries in a food processor or blender with half the water and process until smooth.
  2. Add the remaining water, yoghurt, sugar and rose water and process again until smooth and frothy.
  3. Pour into a glass, sprinkle with black pepper and serve immediately.
