Quesadillas with Salmon and Avocado

Makes 1 

Take a lunchtime trip to Latin America with this colourful hot-stuff quesadilla that will do the Mexican hat dance on your taste buds.

Made using the Lékué Microwave Grill


  • 1 tortilla wrap
  • 1 cooked salmon fillet
  • ½ avocado, sliced.
  • Handful of cherry tomatoes, sliced
  • ½ chilli, sliced
  • Fresh coriander


  1. Preheat the grill for 3 minutes.
  2. Fill and fold your wrap, making sure the tortilla covers the filling, then secure the top of the grill using the silicone side bands.
  3. Place back in the microwave and heat for 3 minutes.
