Prue Leith’s Chicken Karahi
SERVES 4
Named after the dish it’s cooked in, Prue’s Chicken Karahi is everything you could wish for in a curry – spicy, fragrant, delicious… and incredibly simple to make!
Made using our 25cm Prue’s World Karahi Cooking Dish.
Ingredients
- 3 tbsp olive oil
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 2cm fresh ginger, minced
- 300g boneless, skinless chicken fillets, diced
- 500g tomatoes, deseeded and diced
- 1 red pepper, finely sliced
- 1 tsp ground cumin
- ¼ tsp Kashmiri chilli powder
- ½ tsp turmeric
- 100ml water
- 1 tsp salt
- 1 tsp garam masala
To serve
- Pilau rice
- Chapattis
Instructions
- Heat the oil in the Karahi Cooking Dish on a medium heat. Add the onion and fry until golden.
- Stir in the garlic and ginger and cook for 1 minute.
- Add the chicken and fry quickly, for about 2-3 minutes, turning the chicken to cook all sides.
- Add all of the other ingredients except for the garam masala, stir, and simmer for 30 minutes.
- Stir in the garam masala and cook for two more minutes.
- Serve with warm pilau rice and a chapatti.
