- 300g couscous
- 250ml boiling water
- 20g butter
- 6 tbsp finely chopped fresh coriander
- 35g roasted pistachios, coarsely chopped
- Mix the water, couscous and butter together in a large bowl, cover and allow to stand for about 5 minutes or until all the liquid is absorbed, fluffing occasionally with a fork. Stir in the coriander and pistachios.
