• 300g couscous
  • 250ml boiling water
  • 20g butter
  • 6 tbsp finely chopped fresh coriander
  • 35g roasted pistachios, coarsely chopped


  1. Mix the water, couscous and butter together in a large bowl, cover and allow to stand for about 5 minutes or until all the liquid is absorbed, fluffing occasionally with a fork. Stir in the coriander and pistachios.
