• 4 eggs, beaten
  • 4 tbsp caster sugar
  • 1 tsp ground allspice
  • 150ml vanilla syrup
  • 400ml full fat milk
  • Cinnamon sticks, to decorate, optional
  • Freshly grated nutmeg, to garnish


  1. Place the eggs and sugar in a bowl and whisk until combined.
  2. Add the allspice, vanilla syrup and milk and whisk until combined. Cover with clingfilm and chill for 30 minutes.
  3. Gently whisk again and strain into glasses.
  4. Add a cinnamon stick, if required, and finish with a light grating of nutmeg.
