Mint Ice Lollies

Summertime zing!


  • 500ml water
  • 60g chopped mint leaves
  • 100g sugar
  • Juice of 1 lemon
  • A drop of green food colouring


  1. Place the water, chopped mint and sugar in a pan and bring to the boil, stirring until the sugar dissolves. Reduce the heat, simmer for 3 minutes then stir in the lemon juice.
  2. Place a sieve over a bowl and pour the mixture through. Discard the mint leaves. Leave the juice to cool.
  3. Pour into lolly moulds, freeze for 30-45 minutes, push in the lolly sticks and freeze until solid.
