Lemon Thyme Gin Sparkler

  • 750ml gin
  • 500ml fresh lemon juice
  • 750ml thyme syrup
  • 2.5 litres tonic water

Thyme syrup

  • 240g white granulated sugar
  • 12 tbsp fresh thyme
  • 700ml water


  1. Make a simple thyme syrup by bringing 700ml water, 240g sugar and 12 tablespoons fresh thyme to a simmer in a saucepan. Let simmer for a few minutes then remove from heat and leave for another ten minutes. Strain into a Kilner Drinks Dispenser.
  2. When all of the delicious syrup is in the dispenser, add 750ml gin, 500ml fresh lemon juice and all of the tonic water.
  3. Stir well, add a handful of ice cubes and top with lemon wedges and thyme sprigs to decorate.
