Ingredients
- 750ml gin
- 500ml fresh lemon juice
- 750ml thyme syrup
- 2.5 litres tonic water
Thyme syrup
- 240g white granulated sugar
- 12 tbsp fresh thyme
- 700ml water
Instructions
- Make a simple thyme syrup by bringing 700ml water, 240g sugar and 12 tablespoons fresh thyme to a simmer in a saucepan. Let simmer for a few minutes then remove from heat and leave for another ten minutes. Strain into a Kilner Drinks Dispenser.
- When all of the delicious syrup is in the dispenser, add 750ml gin, 500ml fresh lemon juice and all of the tonic water.
- Stir well, add a handful of ice cubes and top with lemon wedges and thyme sprigs to decorate.
