Halloween Vanilla Cookies

Makes approx. 20 cookies

Nibble on a ghost or feast on bat… they’re all treat and no trick!


  • 150g unsalted butter, softened
  • 150g caster sugar
  • 1 small egg, beaten
  • ½ tsp vanilla extract
  • Pinch of salt
  • 300g plain flour, sifted


  1. Preheat the oven to 180°C/350°F.
  2. Cream together the butter and sugar until light and creamy. Add the eggs, vanilla and salt, mix well. Gradually add the flour, mix until incorporated. Bring together into a dough, wrap in clingfilm and refrigerate for an hour.
  3. Roll the dough out on a lightly floured surface to a thickness of 3-4mm. Dip cookie cutters in flour before each use. Arrange on baking trays and bake on the middle shelf for 8-10 minutes or until firm and golden. Cool on the tray for 10 minutes, then transfer onto a wire rack to cool

Tip : We decorated these cookies with icing sugar mixed with a little water and food colouring, piped icing and silver balls, but you could decorate however you like.
