Greek Salad

Serves 4

“Horiatiki”, or country salad, is made for sunny afternoons


  • 12 cherry tomatoes, halved
  • 1 cucumber, peeled and cubed
  • 1 red pepper, de-seeded and diced
  • ½ red onion, finely sliced
  • 150g feta cheese, roughly broken
  • 1 small, firm lettuce, roughly torn
  • 50g black Kalamata olives
  • 1 generous sprig of fresh oregano, roughly torn
  • 1 generous sprig of Greek basil, roughly torn


  • 100ml extra virgin olive oil
  • 3 tbsp red wine vinegar
  • Sea salt & freshly ground black pepper


  1. Place all of the salad ingredients in a large bowl.
  2. Drizzle with the olive oil and red wine vinegar and season to taste.
