- 30ml absinthe
- 10ml apricot liqueur
- 8 mint leaves, plus a sprig to garnish
- Crushed ice
- 15ml jasmine pearl tea, mixed with 1 tsp sugar, cooled
- Mix together the absinthe and apricot liqueur, add the mint leaves and allow to infuse for a few minutes.
- Half-fill a glass with crushed ice, pour in the jasmine tea, strain the absinthe and apricot mixture into the glass. Top up with crushed ice and a garnish with sprig of fresh mint.
