Fairy’s Frappé

It’s not a mojito – turn mint leaves and absinthe into this mystical marvel


  • 30ml absinthe
  • 10ml apricot liqueur
  • 8 mint leaves, plus a sprig to garnish
  • Crushed ice
  • 15ml jasmine pearl tea, mixed with 1 tsp sugar, cooled


  1. Mix together the absinthe and apricot liqueur, add the mint leaves and allow to infuse for a few minutes.
  2. Half-fill a glass with crushed ice, pour in the jasmine tea, strain the absinthe and apricot mixture into the glass. Top up with crushed ice and a garnish with sprig of fresh mint.
