EasiYo Winter Dried Fruit Compote

For the compote

  • 240ml water
  • 1 cinnamon stick
  • 1 star anise
  • 2 tbs honey
  • 1 piece of orange peel

For the cereal biscuits

  • 2 egg whites
  • 1 tbsp caster sugar
  • 1 pinch of cinnamon
  • 135g of your favourite toasted muesli


For the compote

  1. Simmer the dried fruit with water, cinnamon, anise, honey and orange peel until glossy and syrupy.

For the compote

  1. Simply place the egg whites in a large bowl with caster sugar and cinnamon and whisk until white and foamy.
  2. Stir in the muesli and mix until well coated.
  3. Place spoonful’s on a lined baking tray and spread out into even circles with the back of a spoon.
  4. Bake at 170c for 8-12 minutes or until golden.
  5. Cool and set then store in an air tight container for up to a week.
  6. Serve your favourite Easiyo Yoghurt with a good spoonful of compote and a cereal biscuit on the side.
