- 125g cucumber, peeled
- 20 mint leaves
- 1 tsp runny honey (optional)
- 700ml sparkling spring water
- Blend the cucumber and mint then place in a muslin-lined sieve over a bowl and leave in the fridge to drain overnight.
- Mix the honey, if using, into the cucumber juice and pour into the bottle then, holding the bottle at a 45° angle, slowly pour in the sparkling water, leaving a 2-3cm gap at the neck. Secure the cork on the bottle and refrigerate ─ it will keep fresh for 2-3 days.
Tip: Serve with ice cubes, cucumber slices and mint leaves.
