Cucumber Lassi

  • 150g cucumber, peeled and roughly chopped
  • 150g natural yoghurt
  • 100ml ice-cold water
  • Handful of mint leaves, roughly chopped
  • ½ tsp ground cumin
  • Squeeze of lemon juice


  1. Place all the ingredients into the blender, reserving a few mint leaves, and process until smooth. Pour into a glass, decorate with mint leaves if desired and serve immediately.
