- 225g fresh cranberries
- 175g caster sugar
- 40ml water
- Juice and rind of 1 medium orange
- 2 ripe pears, peeled, cored & finely chopped
- 50ml port
- Place the cranberries, sugar, water, orange juice and rind into a large, heavy-bottomed saucepan. Cook over a medium heat for 10 minutes or until the cranberries begin to burst.
- Add the pears and simmer for 30 minutes or until soft, then stir in the port.
- Carefully pour into sterilised bottles and seal the lids tightly.
