- 340g tin sweetcorn, drained
- 425g tin black beans, drained and rinsed
- 4 plum tomatoes, deseeded and diced
- 4 tbsp olive oil
- 1 small red onion, finely diced
- 1 red pepper, finely diced
- 2 tbsp fresh coriander, finely chopped
- Juice of 1 lime
- 1 green chilli, deseeded and finely chopped
- 1 tsp Star Kay White Garlic Extract
- 1 tsp salt
- Add all the ingredients to a large mixing bowl and mix well.
- Cover and refrigerate until needed.
