Ingredients

For the chocolate cookies

  • 150g butter, softened
  • 150g caster sugar
  • 225g plain flour, plus extra for dusting
  • 45g cocoa powder

For the almond cookies

  • 150g butter, softened
  • 150g caster sugar
  • 150g plain flour, plus extra for dusting
  • 150g ground almonds
  • 1½ tsp almond extract
  • 40g flaked almonds

To decorate

Instructions

    1. Preheat the oven to 180°C/Gas 4. Grease 2 baking trays.
    2. To make the chocolate cookie dough, add the butter and sugar to a large bowl and cream together. Sift in the flour and cocoa powder and mix to form a dough. Wrap in cling film and chill in the fridge for an hour.
    3. Meanwhile, make the almond cookie dough by adding the butter and sugar to a large bowl and creaming together. Sift in the flour, add the ground almonds and almond extract, and mix to form a dough. Wrap in cling film and chill in the fridge for an hour.
    4. On a lightly floured surface, roll the chocolate cookie dough to around 5mm thick. Stamp out one cookie in each size, dipping the cutters in flour first to prevent sticking. Place the cookies onto a baking tray.
    5. Repeat for the almond cookies. Place onto a baking tray and sprinkle with flaked almonds, gently pressing them into the dough.
    6. Bake for 10-12 minutes. Leave to cool on the baking trays for 20 minutes, then transfer to a wire rack to cool completely.
    7. To assemble the tree, place the largest chocolate cookie onto a serving plate, followed by the largest almond cookie. Keep stacking and alternating the cookies to create a tapered Christmas tree shape.
    8. For the finishing touch, spoon some Nutella, melted chocolate or icing on top of the smallest chocolate cookie to prop up the smallest almond cookie star.

Tip: for a metallic sparkly effect, sprinkle Edible Silk Metallic Light Silver over the chocolate cookies.
