Asian-Style Chicken with Fragrant Herb Salad

Serves 4

Made in our Large Lakeland Slow Cooker


  • 8 chicken thighs, bone in, skinned

For the marinade

  • 3 stalks lemongrass, trimmed, bruised and very finely chopped
  • 1 tbsp granulated sugar
  • 2 tbsp Thai fish sauce
  • Grated zest and juice of 1 lime
  • 2.5cm piece fresh ginger, peeled and finely grated
  • 1 green chilli, deseeded and chopped
  • 2 Kaffir lime leaves, finely shredded
  • 1 tbsp olive oil

For the salad

  • ½ cucumber, cut into thin strips
  • 2 red chillies, deseeded and chopped
  • 4 spring onions, cut into shreds
  • 1 bunch fresh coriander, roughly chopped or torn
  • 1 bunch fresh mint, roughly chopped or torn
  • 1 bunch Thai sweet basil leaves, torn
  • 2 tbsp Thai fish sauce
  • 1 tbsp rice or white wine vinegar
  • 1 tbsp olive oil
  • 100g unsalted peanuts, crushed and toasted



  1. Cut slashes into the chicken thighs and place in a dish.
  2. To make the marinade put the lemongrass, sugar, fish sauce, lime zest, half the lime juice, ginger, green chilli and lime leaves into a self-seal bag.
  3. Add the chicken and seal the bag, then shake to coat the chicken with marinade. Place in the fridge for a minimum of 30 minutes (leave overnight if possible).
  4. Heat the oil in a frying pan. Add the chicken and fry for 3-4 minutes until lightly browned. Lift out and place in the slow cooker, pouring in the pan residues. Cover and cook on high for 4-6 hours, low for 8-10 hours or auto for 6-8 hours.
  5. To make the salad put the cucumber, red chillies, spring onions, coriander, mint and basil into a bowl. Mix together the remaining lime juice, fish sauce, vinegar, oil and half the peanuts. Pour over the salad and toss lightly.
  6. To serve, arrange the chicken on a dish, spooning over any remaining cooking juices and sprinkle with the remaining peanuts. Serve the salad on the side.

Tip: Don’t peel the apples as the skin gives extra colour and texture to the salad. If you can’t get smoked chicken, roast chicken is equally delicious.
